Foodie Friday: Mediterranean Couscous Wraps



Happy Friday!  I hope everyone had an enjoyable holiday yesterday.  It was hot and humid here (rinse, repeat), but at least it didn't rain.  Because our kids are still little and the fireworks don't get going here until after 11:00 p.m., we let them watch some on YouTube and called it a day.  For dinner, I adapted this recipe a little from Maple Spice.  For dessert, I arranged a fruit flag and we had some chilled watermelon.  I have some frozen grapes to try for tomorrow!  Cold watery desserts are the best in the summer heat.

Mediterranean Couscous Wraps

6 whole wheat flour tortillas (give or take)
Guacamole (I used Wholly Guacamole in 100 calorie pouches)
Couscous (I used olive oil/garlic couscous from Whole Foods, but the Near East brand is just as good)
1/2 red bell pepper
handful carrot matchsticks
1/4 diced tomato
handful sliced scallions
handful diced kalamata olives 
fresh basil

Panini press (optional)
Balsamic glaze (optional)

Preheat panini press or griddle.  Make couscous according to package directions--I made two boxes, but had lots leftover that I served as a side dish to the meal.  Mix veggies together in a small bowl.





Spread about 2 T. guacamole along the middle of the tortilla.  



Add two heaping soup spoons of couscous, and two heaping spoonsful of veggie mix.  



Layer basil leaves on top and roll up.  



Stick face-down in panini press and put top down on low pressure setting.  Wait until wrap starts to sizzle and griddle marks appear on top and remove from heat.  Cut in half and enjoy!  



For an additional treat, serve with balsamic glaze for dipping.
